Cake Batter Cake Pops

A couple of weeks ago I made these for my best friends birthday
Gracie’s Cake Batter Blondies

They made my entire house smell like yummy cake batter, and I was sad I couldn’t have any. I knew then that I wanted to recreate to make them vegan and gluten free.

I’d forgotten I wanted to make them until a few days ago when I was grocery shopping and trying to decide what I wanted to use as filling for my cake pops I was planning on making this week for class. I saw a box of GF and Vegan yellow cake mix and immediately knew I wanted to use blondies as my cake filling!

Cake Batter Cake Pops

I used this recipe for the cake filling, subbing with this for the cake mix
and then Ener-G Egg replacer for the egg.

Cake Batter Cake Pops

1 batch of Gracie’s Cake Batter Blondies
 2c. Vegan Chocolate Chips (I used 365 brand)
Lollipop Sticks (you have to eat a bunch of lollipops to get these….jk I got mine from sur la table, but I’m sure you can get them at any specialty baking/craft store)
Sprinkles (optional)

Make a batch of Cake Batter Blondies, and let sit and cool completely. After it is done cooling, roll into little balls and place into the freezer over night.
After they are done chilling, melt some chocolate and stick the tip of a lollipop stick in the chocolate before pressing it into the cake. It should dry pretty fast because the cake was cold.
When that cools, gently roll the cake pop in chocolate, using a spoon to help you cover it all (note these get messy, hence the chocolate on my fingernails, and hands)

Roll or top with sprinkles if you desire. Or if you are like me you can roll a few in sprinkles and then spill the rest on the floor. I sure hope my vacuum cleaner can taste the difference in organic sprinkles……
 And that’s how you make cake pops! A lot easier then I thought it would be, but it was also messier too. You win some, you lose some, haha.

These are in no way sugar-free, so after eating my failed attempts I got sent strait into a sugar coma and had such a hard crash I needed a nap. It was actually kinda bizarre for that to happen because I used to be the sugar queen.

Was it worth it? Yes.

    I haven’t ever had cake pops, though I did once bake a cake and make frosting so I could make cake pops and never followed through with it. I think it all might still be sitting in my freezer. Yeesh. I really like frozen banana slices coated in chocolate on toothpicks, especially if you stick them in the fridge for a little bit after they’re frozen, because the banana melts in your mouth like ice cream. Aaaaah, so good.
    I never think I spill stuff/make a mess in the kitchen but apparently I do, as I always notice it after when I’m cleaning up, though I think my family makes even more of a mess in the kitchen in the morning than I do all day. I’ll go to sleep with the kitchen all nice and clean, and when I wake up in the morning it’s a disaster zone. I don’t even know how the floor can go from spotless to vacuum-me-asap that quickly.

    These have been popping up all over and they look so adorable – I love that you made it with a vegan mix! Gonna have to break down and make a batch at some point 🙂

    oh my GOODNESS!! Your cake balls look SO GOOD!! I’ve eaten cake batter balls a gazillion times but never actually made my own…dang are they easy though! I def. want to get that gluten free mix and try it out, just like you!

    I’ve never made cake pops but they intrigue me! Actually I’ve never tasted one either. I think this is a problem… they sound so good!
