I’ve never been one for comfort food. Even before I was vegan, I never really felt comforted by the foods that are classified as comforting foods. They always just weighed me down, and made me sleepy. I personally would like to feel the opposite. Light and happy. Having a positive attitude when others are mourning can sometimes makes me look heartless. I’m not. I just don’t think life should be wasted on feeling upset, or crying. Why not be appreciative and smiling? I’m trying the best to pass happiness to others, which in turn makes me feel happier. I’m thankful for my life, Kyle’s life, and everyone I care about’s life (including you!), so I plan on passing happiness to all who will take it.

Yesterday I cooked & baked a happy meal. My sort of comfort food, oranges make me happy, so thats kinda the theme here…..

Orange Cinnamon Quinoa & a Sweet Potato w/ Homemade Coconut Butter

Orange Cinnamon Quinoa
(Makes about 3 servings.)
1/2 cup Quinoa
1 T Orange Zest
Juice from 1/2 Orange
1 cup Water
Cinnamon

Add Quinoa into a microwave safe bowl (yes, I said microwave), add in zest, and cinnamon. (Use as much cinnamon as you like, I love cinnamon so I put quite a lot.) Add water and juice. Mix well. Put into the microwave, covered, for 7 minutes. Let sit for 1, and take out. Be careful, it will be super hot! Let cool for a few more minutes, then enjoy.

Orange Chia Seed Scones


These were amazing.

Orange Chia Seed Scones
(makes about 4 large scones)

1 cup Whole Wheat Flour (or any flour)
1/4 cup Sugar
2 t. Baking Powder
1/4 t. Sea Salt
1/4 cup+ 2 t. Vegan Margarine
1/2 Orange Zested & Juiced
2 t. Chia Seeds
1/4 cup Unsweetened Vanilla Almond Milk
1 T. Water (if needed)

Preheat oven to 400* (I used a toaster oven, so it may very) and lightly grease a cookie sheet. Mix together the Flour, Sugar, Baking Power, and Sea Salt. Add in the Margarine and mix until the consistency of rough sand. (I used my hands first, then switched to a whisk.) Add in zest, juice, and chia seeds. Mix well. Slowly add in the almond milk. If your dough is the right consistency, then leave out the water. Add it in if it seems to stiff. Spoon out onto cookie sheet and bake for about 10 minutes. Stick a toothpick in to see if they’re done. Immediately place onto cooling rack, and thats about it. Enjoy. They are seriously so good.

I hope wherever you are, or what ever you are going through that you remember to smile and be happy. Because you were given today, that is precious, and most definitely something to be happy about.

    im with you! i like meals that makeme feel light and energetic not weighed down! love those scones!! i love scones! saving that recipe!

      they are really good and so easy. best part is you can sub out the four, and the seeds. I guess you could sub the zest and the juice too. They are very versatile, haha.
