PR and a Tofu recipe.

Happy Mothers Day to all you moms out there!
I would like to take this time to say Happy Mothers Day to the best mom in the world! Mom, I love you so much and thanks for being amazing and being my best friend. You are the best!

Saturday was filled with some yummy eats, and a PR as well! (Oh, and I got some new bowls and plates!)

For breakfast I had my normal combo+1/2 banana+unsweetened coconut milk+obscene amounts of cinnamon. Delish.
 I usually hate soupy oats with a passion, but if I don’t use as much milk the night before in them, they soak it all up, and taste amazing with milk poured over it.

Onto my PR. Since there was no way I was going to get a signal on Kevin outside my apartment because I’m literally surrounded by tall buildings, I walked to Union Square (which is literally a 2 minutes away) and sat a people watched for about 5 minutes until I finally got a signal. Yipee. I was off, and the wind was insane. Running hard against the wind must have helped with my speed because I was almost a minute faster then my last 5k!
I know, I’m still kinda a slow poke, but I’m working on it! After my race next weekend, I’m going to work on my speed for a while before I start training for my relay and my 1/2 marathon. I’m still proud of myself though!

After my run I was starving, and it was lunch time
Kickin it old school I had PB&Mashed Banana Sandwich on FFL Brown Rice Bread. Some Carrot stick for crunch factor, and some of TJ’s Just Mango.
Did the trick, but I wanted something dessert like after, so I had another cookie.
Except this time I added protein powder, since I didn’t have much protein in my lunch! It was the same recipe as the day before except I used 1 scoop Vanilla Protein Powder, 2 Tbsp. Coconut flour, and 1 Tbsp. Brown Rice flour. Everything else was the same. This cookie was a lot “cakier” then the other one. Still very good. I almost couldn’t finish it, but who doesn’t finish a cookie.

After lots of frittering and mild attempts at homework, I got my dinner ready because I had to pack one for work. It was so good, and I’m considering having the same thing for dinner tonight!

Simple Baked Tofu Bowl 

>>2 pieces Tofu, cut 1/4 in. thick
1/4c. GF Soy Sauce
1/2c.  Brown Rice
1/2c. Black Eyed Peas
1 small Bok Choy (steamed)
2/3c. Broccoli
1 Tbsp. Hummus

Place tofu in small bowl, and cover with the Soy Sauce, let marinate for 10 minutes, then lay it out on a lightly greased cookie sheet and let bake at 350* for 30 minutes. Flip halfway through.

Assemble all other ingredients in bowl, and place diced tofu, hummus, and the leftover soy sauce on top. Mix it up. Enjoy.

Seriously this combo was just so good!

Now I’m off to finish up some homework, bake something yummy, hit up a bikram yoga class, and go see Something Borrowed. Since my mom and I cant be together today, we are both going to go see it and then talk about it like we saw it together tonight.

I love the 4th of July. Fireworks and the beach? Yes Please.
I also love christmas, because I love to buy presents for people and wrap them. I get some mad gift wrapping skills from my momma!

    yum! all of your food always looks so yummy! you are totally not a slowpoke..that is an awesome time! way to go! the last time i was proud was yesterday as well…my first half marathon post-injury…it was tough but I finished and loved the feeling of crossing the finish line and getting my medal 🙂

    favorite holiday is probably new year’s day…thats kinda cheating because it is my birthday too…but i really do love it 🙂

    YAY FOR THE PR!! OK WOW TAT TOFU looks perfectly cooked- im on it!! umm LOVE YOUR SAMMIE! i felt proud after my long run on SAturday!

    I felt really proud of my workout on sunday. I’m to 4.25 miles and I can maintain my pace really well. Nice job on the PR by the way!!

    I’m totally with you on the fourth of july being a favorite! I wish I went to the beach though.. 😛

    Your tofu looks so good. I love it baking it. Especially when I get the perfect texture 🙂
    P.s I totally want a bite of the cookie! Make me one?

    Congrats on the PR! Just think how fast you could run without the crazy wind!
    I was proud of myself last week during my last long run of half training – I ran lots of hills and finished 10 miles strong.

    Congrats on the PR! That’s so exciting! PR’s make me feel like I’m on cloud 9 for the rest of the day.. I love it!
    The PB on your sandwich looks really really good. I don’t know why but it just looks prettier than the average peanut butter spread on bread!
