Phew, what a week! Sorry for the lack of postage……3 overnights at work, 2 events, 1 race, and an intense amount of homework has made this week the craziest I’ve had in a while! I’ve probably slept about 14 hrs all together in 5 days. Not enough to be able to workout. Although, I did make it to one bikram class which was lovely. No runs, but tomorrow I plan on getting one in before my early class!

After I get one last project done the craziness will be over, and I’ll be able to get some sort of schedule again. I feel like I’ve been really off since spring break, so I’m taking this chance to slip into a new routine, that will hopefully make me more like myself again. As much as I would like to think I love spontaneity, I’m a routine girl. I just function so much better that way. This past month or 2 I’ve been trying to kinda be more “go-with-the-flow”, and it hasn’t been working out to my advantage. Back to structure I go!

I haven’t really been taking picture of my eats lately, because it’s all kinda just been my usual favs. I did however make sure to take some for WIAW. Once again, I’m tardy for thee par-tay, but here you go……

Now time for some exciting news…..
I’ve decided to run the SF half-marathon!

Yayy! Whats even better is my co-worker and I decided were gonna train together for it! I’ve never had a running buddy before so I’m pretty excited. We start training on Monday!

Rainy Day Cookies

Well my Monday started off pretty interesting. Okay, maybe it wasn’t that interesting but I did wake up in pain. My foot was killing me, and I felt like I had chugged a bottle of tequila before bed. I was definitely staving and dehydrated. At the event, there was literally nothing I could eat. I had a banana and a larabar in my purse which I ate but it was hardly enough to sustain me after a race (or anytime, actually). There was however one thing I could eat. Martini Olives. The bar tender liked me, so he filled up an entire martini glass full (Excuse me sir? Can a have a martini, hold the liquid, and heavy on the olives.) and I stored them under my check in table. By the time I was home I was literally so tired I only had enough energy to wash my face, brush my teeth, and crawl into bed. I was planning on letting myself sleep in, but I woke up at 7:30. What the heck man, can’t a girl sleep in?

Since today is a rest day, my Monday was filled with laying around, working on my portfolio, enjoying the sound of the rain, watching movies, and baking cookies.

Lunch was random, I wanted a GM (is it weird I crave them when it’s cold out?), but I also wanted some snacky stuff too, so I had

Told ya it was random, haha. Dinner was a salad beast….I was cravin’ them veggies.
Aren’t salads just so pretty? I love all the colors.

>>Kale, Romaine, Spinach, Tomatoes, Carrots (I’m still hoping they will give me some color), Raisins, Sun Dried Tomatoes, Hummus, Nooch, Salsa, & Balsamic.

I wanted some cookies, after reading  Megan’s post today. Problem was, I couldn’t think of what kind of cookie I wanted. So I basically threw everything that sounded good in a bowl. Results?
Rainy Day Cookies
3 Tbsp. Brown Rice Flour
1/2 Tbsp. Cocoa Powder
1/2 Tbsp Peanut Flour
1 Scoop Protein Powder
2 Tbsp. GF Oats
1 Tbsp. Chia Seeds
1 Tbsp. Pre-Melted Butter
1/4 tsp. Baking Soda
1/2 Banana
Chocolate Chips
Unsweetened Almond Milk (as needed)

Mash up banana and set aside. Mix together all dry ingredients, then add butter and banana. Mix, then add almond milk until dough constancy is achieved. Roll into balls and gently smash into cookie shape on a lightly greased cookie sheet. Bake for 7-9 minutes at 350*.
Verdict? These weren’t the best cookies of all time, but they were still pretty darn good (and they have protein!). I think focusing on one or two flavors always ends up tasting better because the ingredients don’t have to fight for your taste buds, but hey, sometimes a girl has to chop off all her hair and make cookies with a little bit of everything.

but seriously, what doesn’t?

Bay to Breakersssssssss

What a weekend. Actually yesterday I didn’t do much, but today I ran across San Francisco:) It was the 100th annul Bay to Breakers, and it was my first year actually running it. (Last year there was very little running involved….college kids turn it into one huge party.) It was still so much fun though! The costumes were so funny! My favorite was the group that dressed as the royal wedding party, except all the guys were girls, and the girls were guys, it was hilarious. I also saw more naked people then I have ever seen in my entire life, haha. (Not even kidding about that last part). I finished slower then I wanted, but I was running the whole time. I felt awesome, except my foot did not. Once I got to mile 5 it was killing me but I refused to stop and walk, I could slow jog, but no walking. You don’t run 5 miles of a race only to quit with 2.5 miles left. I pushed through and felt fine for a little then we had to walk 3 miles to get to the bus. That sucked!

Honestly right now I could go for a long nap, but I can’t because I’m working an event in a little bit. Why did I agree to work on the night of Bay to Breakers? Because I’ve been dying to work with this event producer and couldn’t say no. Tonight will be a good nights sleep thats for sure!

Onto some pictures….starting with some of my pre-race day eats.
Lunch was a salad beast. Twas amazing.
I also had some toast. Burnt toast. Whoopsie Daisy.
Dessert for lunch was a Banana+PB. There really is no attractive way to photograph this snack. But hey, if your that good you don’t need to be pretty.
I also snacked on some Just Mango throughout the day. I managed not to finish the entire pack. Shocked? Me too.
Other snackage included a Protein Oat Cake topped w/ PB+Cinnamon
 Dinner was Quinoa+Hummus+Balsamic+Raisins….haven’t had this in a while and I missed it!
 Dessert fail quickly turned into a dessert win, when my cookie fell apart. So I crumbled it more, added banana, then poured on some almond milk. Amazeeballs.

Breakfast this morning was my usual bowl of oats. Since I had about 1 hr and a half to let it digest, I don’t think a big breakfast effected my running. Then again, I’ve never tried anything else before a long run so I don’t know if there are better possibilities out there.
Finished the race in 1:17:40. I wanted to finish in under 1:15:00, but next year! I’m definitely going to start working on some speed work to get a faster pace for my next race (hey that rhymes!)
I wasn’t feeling hungry at all after my race but had some coconut milk and hummus just to get something in my stomach. Not together but within 5 minutes of each other, haha.
Swag was awesome. I got so much good stuff! Larabars, coconut water, coconut milk, fuze, hummus….then a lot of stuff I couldn’t have, cheese, chocolate milk, crackers, chips, sports drinks I could prob have but chose not to. I gave all the stuff I didn’t want to some bum. I think I made his day.
Yayyyy! Finishers Medal!

I had too….That song has been stuck in my head ever since last weeks episode of glee.

Good news, my foot doesn’t hurt as bad as it did. If I had to put it on a pain scale I’d say 1/10. It’s not bad at all, and I think if I take it easy tomorrow (I might go to yoga), I should be fine for Sunday!

Onto my Friday……
Started off with some OIAJ….
Then I got dressed in some comfy cute clothes, I knew today would be hectic so I wanted to make sure I was wearing something I could wear alllll day.

My day was filled with lots of running around. Styling is no piece of cake! I managed to grab a salad on a run to get some shoes. It was 10 bucks and wasn’t as great as mine are. Boo.
Look at zeee pretty model. I was surprised when she wolfed down a sandwich from the craft-services table. She was really nice and friggin’ hilarious.

After a long day I came back home and made some dinner with what little food I had.
 CB&J (Cashew Butter & Jam), Carrots, Dates+Chocolate Chips. It was actually reaalllly good. (Or maybe I was just starving?)

Then it was off to the grocery store to stock up on food. I got some good stuff, and cant wait for the salad I’m gonna have tomorrow. It’s gonna be amazing, haha.

Then I went and did something else, what was that? Oh yeah,

Tardy for the party….

So I’m a little tardy for the party on WIAW….so here it is!

My normal bowl of oats for breakfast…..never will get tired of this combo!
Peanut Flour Paste Snack Time
Lunch was Asparagus, Sweet Potato Pumpkin Mash (plus cinnamon & applesauce), Brown Rice Toast  Protein Oat Cake
1/2 Banana
1/4c. Oats
1 Scoop Protein Powder

Mash up the banana, add the oats and protein powder. Microwave for 1:30 & Top with whatever you like! I chose crofers jam.

Apple pie larabar for some in class snackage
Salad Beast: Romaine, Spinach, Tomatos, Carrots, Chickpeas, Black Eyed Peas, Hummus, Nooch, Soy Sauce

For dessert I had another oat cake, but I added applesauce and chocolate chips to the mix
 It was delish…..

Confession: The reason I didn’t post yesterday, was because I’m in a really sucky mood. I did something to my foot and it hurts….bad. My race is this weekend and I really hope the pain will just go away by then .I took it easy yesterday, and I’m planning on doing the same today, but its frustrating because not being able to work out puts me in a bad mood and gets me into the negative mindset that I don’t like to be in. It’s the part of my brain that picks on myself, the one who says mean things. I think maybe doing some ab work and maybe lifting a few hand weights will cheer me up.

Cake Batter Cake Pops

A couple of weeks ago I made these for my best friends birthday
Gracie’s Cake Batter Blondies

They made my entire house smell like yummy cake batter, and I was sad I couldn’t have any. I knew then that I wanted to recreate to make them vegan and gluten free.

I’d forgotten I wanted to make them until a few days ago when I was grocery shopping and trying to decide what I wanted to use as filling for my cake pops I was planning on making this week for class. I saw a box of GF and Vegan yellow cake mix and immediately knew I wanted to use blondies as my cake filling!

Cake Batter Cake Pops

I used this recipe for the cake filling, subbing with this for the cake mix
and then Ener-G Egg replacer for the egg.

Cake Batter Cake Pops

1 batch of Gracie’s Cake Batter Blondies
 2c. Vegan Chocolate Chips (I used 365 brand)
Lollipop Sticks (you have to eat a bunch of lollipops to get these….jk I got mine from sur la table, but I’m sure you can get them at any specialty baking/craft store)
Sprinkles (optional)

Make a batch of Cake Batter Blondies, and let sit and cool completely. After it is done cooling, roll into little balls and place into the freezer over night.
After they are done chilling, melt some chocolate and stick the tip of a lollipop stick in the chocolate before pressing it into the cake. It should dry pretty fast because the cake was cold.
When that cools, gently roll the cake pop in chocolate, using a spoon to help you cover it all (note these get messy, hence the chocolate on my fingernails, and hands)

Roll or top with sprinkles if you desire. Or if you are like me you can roll a few in sprinkles and then spill the rest on the floor. I sure hope my vacuum cleaner can taste the difference in organic sprinkles……
 And that’s how you make cake pops! A lot easier then I thought it would be, but it was also messier too. You win some, you lose some, haha.

These are in no way sugar-free, so after eating my failed attempts I got sent strait into a sugar coma and had such a hard crash I needed a nap. It was actually kinda bizarre for that to happen because I used to be the sugar queen.

Was it worth it? Yes.

Happy Monday!

Confession: There is a green monster back in my life.

I’m not talking about a yummy smoothie

or jealousy

I’m talking about this green monster……
Remember a week ago when I made the goal to give up coffee? That lasted long.

I enjoyed this iced coffee along side my dinner last night (which probably explains why I was until 2am)
Dinner looked a lot like yesterdays lunch, but I added cinnamon to my sammie this time. Made it even better!
I also had a snack plate for dessert
Apple, Some Dates, & TJ’s Dark Chocolate
I did the 30 Day Shred yesterday, I do it every once in while, but I wonder if I could last all 30 days or give up from boredom?

Today was filled with lots of homework and I still have so much to do! Gah, crazy quarter.

Breakfast was my usual oats, but lunch was a little different then the norm.
Baked Falafel (from a box), Dog Food  TJ’s Cumin Chickpeas, Chickpeas, Hummus, & Spinach
This dude was so filling! I wasn’t really in love with the falafel. I prefer homemade.

*insert domination of a Just Mango and more homework*

It was time for a run and I had a 4 miler planed.

I fueled up with
GF Bread and PB+Some Dates
No time for plates! (Speaking of plates, I lurrrrrve my new ones!)
I walked to union square and grabbed a grande iced coffee along the way. I thought I could enjoy it while I waited to get a satellite signal on Kevin.  Well I got one a lot faster then I expected and chugged the whole iced coffee in about 3 sips. MISTAKE.

I was about .5 miles in and my tummy started to feel weird. By the time I got to mile 2 I knew I was about to get sick. Luckily I was right by the edge of the pier and was able to get there before I just puked on the side of the path.

No one ever told me not to eat half a pack of dried mangos, toast, and dates within an hour of running and then washing it down with some black coffee would effect my running. Sheesh, next time I know.

There were definitely some tourists looking at me like I was crazy “uhhh, welcome to San Francisco” As I gracefully stepped down from the edge of the pier, wiped my mouth with my sweatshirt, this guy stepped in front of me and hit on me! I was like really dude? You are a creeper. Jk, I didn’t say that but I politely got away from that conversation as fast as I could.

My pace was actually pretty good. I didn’t feel like I was pushing to hard, so I was happy that I had ran 2 miles in under 18 min
I walked the 2 miles back home and then for dinner I had a green monster that would love me back
I wasn’t feeling like anything solid, so this was perfect. My tummy still feels a little weird so I’m hoping it goes away by morning.
